 Savory Beef & Mushroom Stew

Ingredients:

  • 1.5 lbs of beef stew meat, cut into cubes
  • 2 cups of mushrooms, sliced
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of beef broth (gluten-free)
  • 2 medium carrots, diced
  • 2 stalks of celery, diced
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons of fresh parsley, chopped (for garnish)

  • Large pot
  • Cutting board
  • Knife
  • Wooden spoon
  • Measuring cups
  • Measuring spoons

Instructions:

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, sauté until translucent.
  • Add the beef cubes and brown on all sides.
  • Stir in the mushrooms, carrots, and celery, cooking for another 5 minutes.
  • Pour in the beef broth and add thyme, rosemary, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer for 20 minutes, or until the beef is tender.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh parsley.
