Savory Beef & Mushroom Stew
Ingredients:
- 1.5 lbs of beef stew meat, cut into cubes
- 2 cups of mushrooms, sliced
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 4 cups of beef broth (gluten-free)
- 2 medium carrots, diced
- 2 stalks of celery, diced
- 1 tablespoon of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- 2 tablespoons of fresh parsley, chopped (for garnish)

Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the beef cubes and brown on all sides.
- Stir in the mushrooms, carrots, and celery, cooking for another 5 minutes.
- Pour in the beef broth and add thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20 minutes, or until the beef is tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
